Sous Chef
The DoubleTree by Hilton Hull is currently seeking a Sous Chef to work within our Kitchen Brigade.
The DoubleTree by Hilton provides a 24-hour full-service facility complete with 165 bedrooms, meeting and event space for up to 1,000 delegates, an exclusive branded restaurant, exclusive roof top bar and lobby bar.
The Role:
The successful candidate will be taking on an exciting new challenge with a ''hands on'' focused approach to their work and team. They will have responsibility for MPW restaurant kitchen ensuring a smooth day to day food operation.
The Sous Chef will also actively promote and encourage excellent relations between the kitchen team and front of house team and ensure a solid personal relationship with the Restaurant Manager. They will be accountable to their area of responsibility and will report directly into the Head Chef.
Key Responsibilities Include:
* Monitor sales figures by menu item, review the profitability and popularity of dishes on all menus
* Adhere to all brand and company standard guidelines presented by the business and ensure quality assurance takes place internally with the team
* Supervise the kitchen in the preparation and presentation of all food items. Be present and hands on during key operational times
* Responsible for the cleanliness and maintenance of the kitchen ensuring a high standard is presented at all times
* Ensuring all team members receive the required statutory and branded training. Making sure training records are kept, recorded and up to date
* Attend any branded training opportunities, ensuring that yours and the team's development is ongoing
* Maintain a sound knowledge of purchasing procedures for food stocks. Maintain budgeted food costs, whilst ensuring adequate food stocks and maintaining standards.
* Responsible for wastage control within the kitchen and expected to be present during an auditing of this
* Responsibility for all Health and Safety matters in the kitchen, ensuring all records are kept in line with the Head Chef
* Present and responsible alongside the Head Chef for external and internal auditing of any kind
* Ensure all equipment is kept and maintained by the team. Reporting any equipment issues following the established company procedure
Whilst these are not all the responsibilities the Sous Chef will hold, it is intended to give the candidate an idea of the job role.
Ultimately, we are seeking an experienced Sous Chef with a background in managing retail food operations. The successful candidate will be someone who is passionate about what they do, an excellent motivator and leader, and someone looking for responsibility and ownership.
Applicants will need to demonstrate:
* Minimum of 1+ year in a Sous Chef or equivalent role
* Demonstrated ability to successfully lead a team of people
* Previous experience in a branded retail food environment is a big advantage as well as working within a hotel environment. However, neither are essential to apply
