Specific Responsibilities & Duties
To deputise for the Head Chef and Senior Sous Chef when they are not available
To help create, test and document new dishes that are exciting and in line with our style but that are also efficient and can deliver a final margin of at least 70% (click to see sample menu).
To help ensure that the food is cooked consistently to the highest standards and delivered in a timely fashion.
To help source the best local and regional ingredients taking into account availability quality and price.
To help recruit, manage and motivate the kitchen team as whole and ensure that rotas are efficient, fair and in line with pre-agreed budgets.
To help ensure that the culture within the kitchen is a happy one and that everyone is well trained and encouraged to input new ideas.
To promote good relations between the kitchen team and the front of house staff.
To help ensure that the highest standard of food hygiene, due diligence and health and safety is maintained at all times.
Comply with all Company policies and procedures, especially health and safety.
Be flexible and adaptable and take a proactive approach to work
Undertake such other duties as may reasonably be required
Good general education and appropriate level catering qualifications
Current, clean driving licence and/or organised reliable transport to work
Experience in high-end kitchens regularly serving over 100 a la carte covers in one sitting
Prior experience as a Sous Chef or something similar.
