Chef de Partie (Pastry)
Department: Kitchen
Slough - Live in accommodation available
GBP19,000 + overtime
Responsible to: Executive Chef
Hours of Work: 45 hours a week, to include weekends and bank holidays as per the rota Overall Purpose: Preparing top class cuisine/dishes using fresh local ingredients
Specific Duties of Chef de Partie (Pastry)
* Assist the Executive Chef, Head Pastry Chef to retain the 5 Red Star Standards and 3 Rosettes in the Fine Dining restaurant
* Work towards achieving a fourth Rosette and Michelin Star in the Fine Dining restaurant
* Assist the Head Pastry Chef and Sous Chef in overseeing the Pastry, to include freshness of ingredients and mis en place, and to ensure that the Pastry ready for service in all outlets
* Assist in training the Demi Chefs and Commis Chefs
* Ensure that the Pastry is organised with the correct daily function sheets, job lists, and ensure that jobs are prioritised in the correct order
* Assist in maintaining a professional level in the Pastry adhering to the Standard Operating Procedures and policies
* Assist in the day to day ordering for the Pastry Kitchen
* Ensure that the Pastry areas are clean and meet safety standards
* Assist with HACCP and Health and Safety procedures
* Ensure that all Pastry equipment is fully functional and stored correctly and that staff are looking after the equipment
* Assisting with Dish of Day, Club Night, Pasta/Pizza Night
* Occasionally assist in the other kitchen areas
As a Chef de Partie (Pastry) you will need to have :-
* Previous experience
* Work to a high standard
