Our client is a historic country house hotel, set in 20 acres of woodland on the slopes of the Surrey/Sussex Hills. The former farm house and outbuildings form a picturesque hamlet on the outskirts of the market town of Haslemere.
Today the area, much like the hotel, remains relatively unchanged by the 21st century, retaining much of its historical charm.
The main hotel comprises of converted farm out-building barns, cattle sheds, milking parlours and stalls. The listed Tudor Farm House dates back to 1475. Once the centre of a large estate, this is now our renowned Restaurant and it houses five individual bedrooms and suites.
We have an open position for a Junior Sous Chef to join the already established team.
Working 5 days out of 7 you will be tasked with a number of different duties including:
- Running the kitchen in the absence of the Sous and Head Chef
- Working with the other senior chefs to design seasonal dishes and menu's
- Ensuring all sections in the kitchen are manned and run to the required standard
- New and existing team members receive on-going training and development
- Overseeing all Health & Safety and relevant audits for the kitchen and it's team
Ideal candidates will have worked in a similar 4* operation or equivalent and be fully-versed in managing kitchen teams. You will have some understanding of P+L within a commercial kitchen and have a clear idea of your preferred cooking style and who your inspirations are within the industry.
