We are working with a wonderful proprietor of a stylish modern to find an experienced Head Chef to take over and further develop the client's excellent reputation for food (including an Award-winning Sunday Lunch)
The location is a 19th-century building with a modern country feel, there is a relaxed bar area, 50 seat restaurant and outside seating. Since taking over the location the team have grown the foods sales to GBP7000 a week including 130 covers on a Sunday regularly. The kitchen has a 5 Sence Rational, 8 burners, a double oven, walk-in fridge/freezer and in the new year will be having an extension added and re-organised providing an opportunity to increase efficiency.
This is a "Hands On" role, that will have you engaged in daily service and managing the staff of:
* Sous Chef
* Senior CDP
* Commis
* 3 Part Time Kp's
You will be responsible for the development of daily 'Specials', Event & Buffet Menus, New and Seasonal menus in line with the pub's ethos, and to maintain and further improve GP's in line with targets.
Your responsibilities will include;
* Being fully able to demonstrate your knowledge of Allergens and HACCP
* Ability to liaise well with the front of house team - working together to achieve success
* Team management, development and effective rota planning
* Stock control, purchasing, wastage & rotation management
* Menu costing and development using our state-of-the-art "CaterCost" menu system with full allergen and nutritional controls
* Maintenance of high standards in quality, record keeping & service from within your team
* Pro-active work with the owners and General Manager in pursuit of the company's goals and business strategy

* Profit-related Share Scheme worth circa GBP2000 p.a. (after 6 months service & based on past performance)
* An equal share of tips (current value GBP2250 p.a.)
