Trigonos is a multi-purpose events and residential centre based in the Snowdonia National Park and hosting a wide range of groups.  We specialise in vegetarian cuisine and the excellent quality and freshness of our food is a key element in developing and maintaining our reputation. We are currently looking for two part-time chefs/cooks to join our small and enthusiastic kitchen team.

Our focus is on providing fresh, seasonal and tasty food from scratch, using the produce from our own land as possible. We focus on local, in season, fairtrade and organic produce wherever feasible.

Food

Our cooking is almost totally vegetarian but occasionally we have guests requiring simple meat or fish dishes. You must therefore be able to satisfy this requirement when necessary. We also aim to meet most dietary needs, such as vegan, gluten-free and dairy-free, to ensure that all of our guests are equally well catered for.

Meals are prepared for up to 30 guests per day. Chefs plan their own menus (within guidelines) so that guests enjoy a variety of dishes and cooking styles. You will be expected to plan your own menus after initial induction and training. We encourage creativity and imagination within budgetary constraints.

During quieter times or when there is a glut of produce from the land, the kitchen works together to produce preserves or to freeze food for use during the coming year.

Responsibilities

You will be responsible for:

• Devising, planning and implementing your own menus.
• Preparing lunches, afternoon cakes and dinners (but not breakfasts).
• Supervising our skilful kitchen team
• Ensuring during your shifts that hygiene standards and record keeping are maintained and all legal requirements are adhered to in the kitchen and storage areas
• Dealing directly with guests when dietary queries arise.

Accountability & Training

You will be accountable to the Lead Chef. Full induction training and support will be provided to enable you to settle into the role before you ‘go it alone’. Ongoing support and training is provided in key areas, such as dealing with allergens and food hygiene standard. All chefs and other catering staff work as a team that shares ideas and offers support to its members.

Hours & Pay

All chefs work to a rota system, with hours being divided fairly throughout a full week. You will therefore be expected to cover some weekends on this basis. Chefs currently work a ten hour, straight shift day. This can be varied if circumstances require.

Actual hours worked each week may vary according to the level of business, holiday and sickness cover etc. We operate an annualised hours pay system which ensures regular monthly remuneration no matter the hours actually worked in a particular pay period.

Salary for this post is in the region of £19,50o p.a. full-time equivalent and is subject to annual review.

We also welcome candidates who are eligible to work on a self-employed basis.

Qualifications

Experience, competence and enthusiasm for cooking vegetarian food are more important than formal qualifications. If you are interested but unsure about applying then please contact us to discuss your particular situation.
