* Experience of managing in a fresh food business
* Knowledge of GP, labour costs and achieving sales targets
* Great knowledge of wines, sprits, beers and ales
* Setting targets with clear standards and time scales
* Understanding the business by continually seeking opportunities to increase sales and improve service by anticipating changes and planning accordingly
