Sous Chef required for busy pub based in Pulborough.

As a Sous Chef you will be part of the kitchen team and report to the Head Chef.

Purpose

The Sous Chef is responsible for assisting the Head Chef with storage, preparation and cooking of all food items for the Inn. To demonstrate and help maintain high levels of service that consistently exceed customer expectations.

Your Responsibilities

• Monitor food stocks and stock movement
• Ensure minimum kitchen wastage
• Teach skills and recipes to members of the team
• Follow cleaning schedules for the kitchen and delegate others to keep the kitchen clean
• Accept and store deliveries correctly as and when required
• Ensure that mis-en-place is completed in all sections
• Lead the kitchen team in absence of the Head Chef
• Accurately record temperature of fridges and food in accordance with current legislation
• Ensure ordering and supply meets demand to reduce spending and waste
• Collaborate on the development of new menus with the management team and create 'specials' in the absence of the Head Chef
