Workplace description: Situated on the crescent of Craignure Bay, this hotel has stunning views over to Morvern and the west coast. The main ferry terminal is just a few hundred yards away, with a shoreline path leading to the hotel. Most of the rooms at hotel have views of the scenic surroundings.

Main duties and responsibilities: As Restaurant Manager you will lead inspire and motivate the team to give great service and a lasting memory and impression on our customers in line with our company values in all food and bar service areas of the Hotel including restaurant, bar lounge, small conference facilities and Spa and Leisure.
This is a hands on role and you should thrive on pressure and be motivated to achieve and exceed expectations both for the customer and the company.
Working with the General Manager and the Head Chef towards targets and cash plan and you will be driven to exceed.
Delivering staff training is essential for all the team to be able to achieve in all areas of food and drink service within the hotel and spa.
Customer feedback is of high importance and focus in order that we can deliver what is expected and what our customers are looking for in their visit to our hotel. Your enthusiasm should shine through and reflect in your team to consistently drive for improvement and continued guest satisfaction.

Main Responsibilities and Accountabilities:
Overseeing, planning and running all food service in the Hotel
Overseeing, planning and running all bar service in the Hotel.
Ensure correct staffing levels are adhered to at all times in line with cash plan and service standards.
Prepare rotas and consider wage costs against forecast and business sheets.
Be fully aware of the department financial targets and where appropriate communicate these to reporting team members.
Ensure every opportunity to upsell and increase sales to meet and exceed all financial targets.
Responsible for all monies and floats for the department and to ensure correct billing procedures are followed and that all tills are balanced daily.
Ensue room bills to go on to account as signed by guests to avoid issue.
Ensure adequate supplies and storage and control of all bar/food and non-food items.
Follow, understand and complete company purchasing procedures and required paperwork.
Complete weekly stocktakes of bar products for preparation of orders.
Complete of monthly stocktakes for crockery, cutlery and glassware.
Monitor and control breakages.
Follow all company audit procedures and attend with company stock taker and auditor as and when required.
Consider all times required GP
Control, record and monitor wastage
Ensure at all times that all food and bar service areas are set up as required for business needs and in line with floor plans.
Training of all restaurant and bar staff
Menus, wine lists consider at all times presentation, replacement requirements etc.
Cleaning schedules and deep cleaning
Dealing with guests comments, issues up to the level of authority.

Occasional responsibilities and accountabilities
Duty manager shifts- which includes being on call.
Able to offer reception cover and support
Function co-ordinator

Essential criteria:
Excellent command of English both written and spoken
Flexible approach to working hours and shifts.
Scottish Personal licence holder preferred, but not essential
First aid at work qualification - preferred but not essential
Able to act at fire marshall
Excellent standard of numeracy
Smart and well presented
Approachable with a great personality yet able to be authoritative.
Team player
Able to recognise and develop the team
Able to effectively manage the conduct and performance of team members.
Previous experience in Restaurant management with high volume.
Excellent computer skills
Great people skills.
Full driving licence preferred but not essential.
