Sous Chef - North Cornwall Resort and Spa £25,000 - £26,000 plus tips and straight shifts

Excellent career move for an ambitious Junior Sous/ Sous chef looking to join a well known seaside establishment promoting it's stunning views across this fantastically located beach.  

We are looking for a sous chef who is passionate about developing and improving their skills and building their career in the long-term. Ideally the candidate will be from a hotel background looking to join our client and help support the head chef in this busy kitchen. 

This position is based on one of North Cornwall's most scenic beaches- a thriving, busy restaurant that is going from strength to strength.

We are looking for a confident Sous chef who can hold their own in the kitchen and consistently cook to a high standard. You will be working with excellent quality ingredients creating stunning seasonal dishes within this busy 80-100 cover modern, contemporary style of cuisine. Due to the busy nature of the role you will need to be organised, happy working under-pressure and great at working in team. You will ideally have experience of running a busy kitchen in the absence of the head chef and leading a brigade of chefs to ensure all orders are completed to the highest of standards that would be expected. The hotel also caters for events and conferences so experience of catering for groups and functions is preferred 

As a Sous chef your roles is vital to the development of the kitchen team and you will be able to lead as well as teach and help develop the team on going, so the incentive is there to help and develop the other team members and pass on your own knowledge.

Your working hours will be between 40 - 50 per week working 5 of 7 days on straight shifts.

Key responsibilities will include:

  • Assisting the head chef in the daily running of a busy kitchen and running the kitchen in the head chefs absence
  • being a vital role in the daily production of all food both hot and cold
  • The daily service of all food
  • To abide by and promote all food and hygiene regulations
  • To assist with ordering and rotas as instructed
  • Input into menu planning and costing
  • Key Skills:

    Evidence of previous senior role in kitchen

    Ability to work under pressure

    knowledge of seasonal foods

    To be a team player demonstrating flexibility and development

    Qualities you will need to display:

    leadership of a team

    A genuine passion for authentic food

    Enthusiasm

    Flexibility and willingness to embrace change

    Experience in:

    pressurised and fast working environment

    An all round ability in cooking and being able to turn your hand to any section

    Different catering environments

    clear understanding in food and safety regulations
