Sous chef - £23,000 + Tips - Nr Bodmin - Restaurant

Cornwall Staff Agency are currently looking for a permanent, full-time sous chef, to assist the head chef in the smooth running of our clients stunning 17th Century inn that is renowned for the stunning food offerings on it's menu. Our client is looking for someone who is experienced in the kitchen and has a proven record of running the kitchen in absence of a head chef. 

The restaurant draws on the time of year, combining flavours that are Cornish, traditional British and European. The menu is bursting with colourful vibrant dishes that combine flavours built on by ingredients that speak for themselves. As Sous chef you will be equally as passionate as the head chef for creating simple rustic cuisine and delivering an exquisite experience for the paying patrons.

The ideal candidate will have at least a year within a similar role at a similar level. The candidate will be focused, driven and passionate whilst also being able to command a kitchen. They should be able to be a mentor and team player. The ideal candidate will be able to demonstrate longevity throughout their CV and a desire to progress professionally.

This is a pivotal role within the kitchen due to the responsibility of taking the lead in the head chef’s absence. The right candidate will need to be up to date with all kitchen operations from rota's, GP, ordering and P&L, to being in accordance of the highest levels of health and hygiene and ensuring this is held throughout the kitchen and by all staff, you will also be ensuring that the exceptional high standards of food quality and presentation are consistently met.

For this role you will ideally:

  • Have at least 1 years experience of working at a minimum of 1 AA Rosette establishment
  • Have a minimum of your Level 2 in Catering and your level 2 in health and hygiene
  • Be able to help support the head chef and lead the kitchen in their absence
  • Be able to complete the necessary paperwork and ordering whilst keeping to GP
  • Be able to demonstrate excellent training and development to the lower levels within the kitchen
  • The role is paying circa £23,000 with additional tip share. You will be looking to complete a maximum of 50hrs throughout the summer across a mix of splits and straights, moving to striaght shifts when kitchen numbers are up.
