Main Duties
Operations - 55% of the role
Remain health & safety compliant
Maintain full control of wastage
Ensure high levels of cleanliness throughout the kitchen
Deliver consistent top quality food during service
Ensure all kitchen deliveries are correctly checked and stored diligently
Illustrate an ability to work throughout all areas of the kitchen
Facilitate stock rotation
Facilitate a clear understanding of Profit & Loss & Gross Profit control
Assist team members in thorough preparation of food before during and after service
Manage, develop and mentor entire kitchen brigade
Work closely with Village Manager to ensure the successful delivery of events
Administration - 25% of the role
Stock ordering
Ensuring all daily checklists and HACCP are completed (i.e. date labelling, temperature checks, probe calibration etc)
Incorporate new legislations into all menu designs
Work with Audley HR team and OSP in recruitment of staff
Design & develop menu specification sheets
Compile rotas for full kitchen brigade
Special events menu planning and costing
Communication - 10% of the role
Train, mentor & develop the full kitchen brigade
Communicate regularly with all Heads of Departments
Coordinate stock control
Implement new menu items whilst adhering to current legislation and working to specific GP targets
Develop good relationships with local and national suppliers
Customer Service - 10% of the role
Demonstrate an awareness of customer needs and requirements i.e. allergens, medication etc.
Provide high levels of customer service with all internal & external customers
Assist colleagues with events as and when required
Work closely with the Local Marketing Manager
Any other duties as decreed by your manager
Adhere to all Audley policies & procedures and ensure health & safety requirements are met at all times
