Rate Period: Annum

Salary: GBP32,000.00 - GBP36,000.00

Job Purpose Statement

To create and deliver consistently excellent food to a high standard, whilst working towards company mandated KPI's, with the key aim of retaining and attracting new customers whilst adhering to all health & hygiene & Audley company legislation.

Main Duties

Operations - 55% of the role

  • Remain health & safety compliant
  • Maintain full control of wastage
  • Ensure high levels of cleanliness throughout the kitchen
  • Deliver consistent top quality food during service
  • Ensure all kitchen deliveries are correctly checked and stored diligently
  • Illustrate an ability to work throughout all areas of the kitchen
  • Facilitate stock rotation
  • Facilitate a clear understanding of Profit & Loss & Gross Profit control
  • Assist team members in thorough preparation of food before during and after service
  • Manage, develop and mentor entire kitchen brigade
  • Work closely with Village Manager to ensure the successful delivery of events
  • Administration - 25% of the role

  • Stock ordering
  • Ensuring all daily checklists and HACCP are completed (i.e. date labelling, temperature checks, probe calibration etc)
  • Incorporate new legislations into all menu designs
  • Work with Audley HR team and OSP in recruitment of staff
  • Design & develop menu specification sheets
  • Compile rotas for full kitchen brigade
  • Special events menu planning and costing
  • Communication - 10% of the role

  • Train, mentor & develop the full kitchen brigade
  • Communicate regularly with all Heads of Departments
  • Coordinate stock control
  • Implement new menu items whilst adhering to current legislation and working to specific GP targets
  • Develop good relationships with local and national suppliers
  • Customer Service - 10% of the role

  • Demonstrate an awareness of customer needs and requirements i.e. allergens, medication etc.
  • Provide high levels of customer service with all internal & external customers
  • Assist colleagues with events as and when required
  • Work closely with the Local Marketing Manager
  • Any other duties as decreed by your manager
  • Adhere to all Audley policies & procedures and ensure health & safety requirements are met at all times

  • Food hygiene level 4
  • Experience of stock ordering
  • Excellent level of culinary knowledge & skills
  • Positive attitude
  • Tolerant nature
  • Flexible approach to daily duties and shift patterns
  • Previous experience in a similar role
  • Enthusiastic
  • Knowledge of GP's, KPI's and their impact on the business
  • Good level of computer literacy
  • Excellent team building skills
  • Desirable

  • Previous experience cooking for people with strict dietary requirements
  • Local knowledge
  • Full driving licence and own vehicle
  • Experience with complaint handling
