Sous Chef - The Lido, Bristol We are seeking an exceptional, proactive and passionate Sous Chef to take on this rewarding challenge as the second in command at our nationally known restaurant. The seasonally changing Lido menu has been carefully crafted by Freddy Bird to take on a Moorish and Mediterranean style of cooking with a strong focus on provenance. Primarily cooking over fire and in wood ovens at the Lido, the chefs are dedicated to great tasting and unpretentious food. The Lido is open 7 days a week for breakfast, lunch and dinner so this is a huge undertaking. Furthermore we serve our tapas menu from 12pm throughout the day. The time to talk with your FOH team in between service needs to be proactive, detailed and focused on really teaching the FOH team about the dishes that day. We require any applicant to have at least 1 years experience in a similar role and establishment with proven experience running a kitchen and managing and maintaining a team. We are looking for somebody who knows how to run a kitchen but most importantly somebody who wants to be the central pillar to this iconic site whilst being inherently passionate about food. Other responsibilities you will undertake; Deputising in the absence of the Head Chef In the absence of the head chef overall responsibility for daily operations in the kitchen Placing orders with suppliers Maintaining or raising the profit margins on food Ensuring all menus are updated based on produce availability and seasonality and that all menus are accurately calculated to ensure maximum GP. Assisting in the managing, training of a brigade of chefs Who are we? The Lido is an outdoor swimming pool surrounded by an award winning restaurant, tapas bar and spa. Dating back to 1849 the Lido is one of the oldest surviving Lido's in the UK, allowing all year round swimming. The Lido opened its doors once more to Bristol and beyond in December 2008 and has since become a venue for every occasion from daily swims, celebrations and holidays. Our Award winning restaurant is situated in the old viewing gallery of the Clifton Pool.
