Senior Sous Chef - GBP25,000 to GBP28,000 - 3 Star Hotel -Fine Dining - Cornish Coastal location - Lounge & Bar - 1 AA Rosette
Towngate personnel are currently recruiting a Senior Sous Chef for a historic coastal hotel located in the beautiful Cornish port of Falmouth.
Using only the freshest locally sourced produce from in and around Falmouth, showcasing the best that the south west has to offer this is a great opportunity for you.
The award winning menu changes on a daily basis and offers a tantalising mix of international dishes and British favorites meaning you'll always be cooking something new and gives the opportunity to expand your culinary knowledge.
The restaurant with 1 AA Rosette regularly serves 40 - 50 covers for dinner service and is a very popular venue for weddings with banqueting catering up to 250 people.
They also have a popular afternoon tea service with numbers dependent on time of year but you should expect at least 20-30 on a regular basis.
Skills and duties include:
  • Creating menus that meet and exceed customer's needs
  • Ensuring the consistent production of high quality food through all hotel food outlets
  • Developing customer relations through proactive interaction with guests or dealing with any issues raised
  • Effective management of the department including budgeting, forecasting, resource planning, and waste management
  • Excellent leadership of the kitchen brigade, including ensuring ongoing development of team members, and putting in place an effective approach to succession planning
  • Previous relevant experienced as a Snr Sous or a high performing Sous Chef in a first class property
  • Excellent leadership skills
  • A creative approach to the production of high quality food
  • A business focused approach to managing a hotel kitchen
  • Comfortable working in high pressured, demanding environment
  • Rosette experience desirable
We are looking for a Senior Sous Chef who is able to lead from the front, able support and train junior members of the brigade where necessary with the ability to cover all sections as and when needed.
The ideal Candidate must be passionate, driven, creative, and have a strong commitment to the job, brigade and company.
As Senior Sous Chef you must have worked in a busy restaurant environment in a rosette establishment, hotel experience would be beneficial.
