Senior Sous Chef - Breadsall Priory Marriott Hotel, Derby This four star hotel has a focus on culinary excellence and provides staff with extensive, ongoing training and development. Our hotel is a great place to develop your skills, supporting weddings, prolific golf events, sports teams, extensive leisure facilities and contemporary British dining at our hotel's on-site Priory Restaurant. Responsibilities of the role are to supervise day to day kitchen operations, staff and all food preparation areas including Banquets, Room Service, Restaurant, bar/lounge and associate cafeteria to ensure a consistent, high quality food product. Work with the Food and Beverage management team and associates to continually improve guest and associate satisfaction while maintaining the operating budget, use leadership skills to manage other managers. Prepare special meals or substitute items. Regulate temperature of ovens, broilers, grills, and roasters. Pull food from freezer storage to thaw in the refrigerator. Ensure proper portion, arrangement, and food garnish. Maintain food logs, monitor the quality and quantity of food that is prepared. Communicate assistance needed during busy periods. Inform Chef of excess food items for use in daily specials. Inform service staff of out of stock items and available menu specials. Ensure the quality of the food items. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist. Prepare cold foods. Assist management in hiring, training, scheduling, evaluating, counselling, disciplining, and motivating and coaching employees; serve as a role model.
