Head Chef/Kitchen Manager Required : Quality restaurant/gastro pub

Set within the grounds of a beautiful 5-star multi-faceted holiday & leisure operation

Location: Stunning location in The Lakes near Pooley Bridge/Penrith/Ullswater

Salary: Basic of around 37,000 plus a 6k bonus taking the package to around 43,000 plus a potential great separate living accommodation if required, various benefits to progress

Service finishes at 8pm

The operation:

Award-winning company with a successful restaurant/gastro operation set within stunning grounds and part of a bigger multi-faceted leisure/holiday operation is looking for an experienced Head Chef . The operation is set in the grounds of a luxury development and has 100 inside covers and seating for 50 diners outside with street food kitchen.

Reporting directly to the F & B Manager and with the ability to run the kitchen, managing a great team, adhering to all policies & procedures as well as producing great food, well-costed and presented, this role offers superb opportunities & the chance to progress for the right candidate to be part of an exciting growing successful company with a number of quality 5-star operations set in idyllic locations.

All dishes are made from fresh locally sourced produce and cooked from scratch with a leaning towards quality fresh gastro pub-style food with mouth-watering key staple dishes such as fish & chips, steaks, risottos & pastas alongside seasonal dishes & specials.

The restaurant also serves fresh stone baked pizzas & an popular children's menu.

Last orders for food are at 8.00pm so there are no late nights and anyone taking the role will be fully supported.

Requirements & Responsibilities:

Experienced Head Chef or Kitchen Manager within a good quality restaurant or gastro/food pub. The role may also suit someone with branded food pub experience, but can also cook with fresh ingredients.

The ability to produce high quality dishes made from fresh locally-sourced produce as well as cooking fresh pizzas and popular dishes such as fish and chips.

To ensure that the team are working efficiently & food is prepared & presented to the highest standards, served efficiently & is consistent

The ability to run the kitchen & perform all management duties

Self-motivated with the ability to manage, motivate & train the kitchen team

Observe all dishes going out to the restaurant & to ensure they are approved before going to the table

The ability to monitor stock control & manage GPs, ensuring stock rotation & portion control as well as daily ordering

Manage the kitchen to ensure that it is always kept to the highest standards & complying with all H & S and food hygiene policies and regulations

A passion for high quality fresh food and a commitment to great service

Food & Hygiene certificate, Level 2 or above

Driving licence & own transport

Salary package: Great starting salary depending on experience with a bonus, tips and progression for the right candidate plus excellent company benefits. Basic will be around 37k but with bonus the package is around 43k and there is potential for a separate live-in accommodation for the successful candidate to live or to stay there whilst working and go home on days off. The area is busy all year round but there is time out of season to plan & take time off and as the restaurant closes relatively early the role will give a good work/life balance.
