They is now looking to recruit a Full Time Head Chef for one of their Hotels in Bournemouth.
As Head Chef, you will be responsible for producing food for up to 150 residents on half board packages plus bar snacks and occasional functions. You will be one of 20 experienced Head Chefs leading kitchen teams at our client’s 20 hotels situated in seaside resorts throughout Great Britain.

It will be your responsibility to lead a team producing food which will delight guests while conforming to company hygiene and budget standards. You will be responsible for all processes and procedures within the journey of that meal from receipt of raw materials to the end product on the table. The role also requires accurate completion of company and legal paperwork, compliance with legal statutes concerning the kitchen and the management and development of all kitchen staff.

You will ensure all cooking equipment is maintained in a safe working condition and defective equipment repaired in a timely fashion and will ensure completion of hot and cold temperature charts and security of stock in stores.

In order to be successful in this role, it is essential that you have previous experience in a similar role within a hotel environment. With a high level of food hygiene and health and safety knowledge, you will have a passion for food and for customer satisfaction coupled with the ability to lead and inspire a team.

You must also possess excellent organisational skills, be flexible and adaptable in your approach to work and you should be reliable and punctual.

Hours: Up to 45 hours per week over 6 days in season (Easter to end of October). There is no late night working. In February, March and November, work is usually Monday-Friday with only occasional weekend working. We are closed in January and the early part of February.

Holidays: 28 days paid holidays per annum

General Nature of Job:

To prepare fresh and frozen poultry to a high standard and to individual customer bespoke specification for supply to both retail and the catering trade.

Key Tasks and Responsibilities:

- Preparation of fresh and frozen poultry which incorporates various butcher knife skills.

- To make up bespoke customer orders as per the order sheet, listening and following instruction accurately ensuring that if the instruction or detail given requires clarification that you ask.

- To be aware, adhere to and understand Food Hygiene regulations, personal safety procedures including the handling and use of knives and machinery.

- To ensure stock is rotated accurately, checking delivered goods, picking, packing and assisting with deliveries and cleaning as required. Ensure fridge hygiene is maintained and that temperature and batch records are taken and recorded accurately as required.

- To be aware of yield and wastage on all produce ensuring cost effective production occurs at all times.

- To accurately complete any paperwork associated with your duties.

- To establish good working relationships with other team members

- To work on own initiative with accuracy and commitment, coaching and training others as required.

- To include, any reasonable instruction given to you by your supervisor or management.
