SENIOR SOUS CHEF
- Permanent, full time, 48 hours per week over 4 or 5 days.
- Excellent benefits - salary £26,000 per annum plus bonus
- Progression to Head Chef within 2-3 years for the right applicant
A bit about The Company…
Thwaites was established in 1807 and to this day remains a family run Business. As part of the group, we have six Spa Hotels, eight Inns, hundreds of Pubs and a Brewery. We are focused on providing superb hospitality in outstanding properties in great locations.
Our company is on a progressive expansion plan with at least 4 new Inns opening in the next 12 months and we have a major plan of refurbishment and improvement across many of our properties.
About the Pub…
The Lister Arms, a Thwaites Inn of Character, can be found on the green in picturesque village of Malham, in the heart of the Yorkshire Dales National Park. It is a traditional Dales pub that caters for tens of thousands of tourists every year that come to Malham to enjoy the great outdoors. We also have a fine reputation as a destination dining pub and you can always find a few locals propping up the bar.
We have 120 covers inside, at least the same amount outside and we can expect to serve 100 to 400 guests a day, depending on the time of year.
Our food is traditional, you know what our best-selling dishes will be…homemade pies, fresh fish and chips and great steaks, but we have the freedom to have an interesting and innovative specials board. Almost everything is homemade; we even bake our own bread every day.
And our beer range is unrivalled in the area, at least 7 real ales, 4 draught ciders, a growing gin collection and carefully selected wine list.
Now with 23 guest bedrooms across three buildings, and high occupancy levels, our staying guests are a very important part of our business.

About the Role…
This is a great opportunity for an energetic, dynamic and experienced sous chef to fit into our ten strong kitchen brigade. You will have the ability to prepare fresh food every day to ensure the meals are made in keeping with our excellent Company standards.
As Senior Sous Chef you will have a say in the creation of our new menus twice a year, and be instrumental in helping us achieve a high food GP (currently above 70%). You’ll possess and demonstrate good management and communication skills. You’ll be involved in the day to day running of our busy kitchen and so previous experience of purchasing systems, reducing costs and improving margins, and of course health and safety management systems that fully comply with current legislation are a must.

We are looking for a candidate with a natural drive for excellence, commitment and achieving of the highest standards possible, with the ability to prepare foods to a high standard and possess good management skills. Previous experience in this or a similar role is essential.

Role Details…
We are looking for 1, full time Senior Sous Chef to work up to 48 hours per week. The salary for this role is negotiable but will be in the region of £26,000 plus achievable bonus.
