Our Junior Sous Chef will be responsible for supervising all phases of food production, carrying full responsibility for food quality and service from all food producing areas. This should be accomplished through proper training and direction of all Departmental Assistants who operate in compliance with company standards of quality, portion control, recipes, associate relations and sanitation as outlined by Marriott Policies.

Duties and Responsibilities of the Junior Sous Chef


Ability to prepare and present meals utilizing culinary principles, standards, techniques and equipment (e.g., grilling, saut??ing, broiling, baking, using decorative food displays, following recipes)
Knowledge of techniques and equipment for preparing and presenting food products (both plant and animal) for consumption, including storage/handling techniques and sanitation standards
Prepares and cooks foods of all types, either on a regular basis or for special guests or functions
Supervises and coordinates activities of cooks and workers engaged in food preparation
Checks the quality of raw and cooked food products to ensure that standards are met
Performs all duties of kitchen managers and ambassadors as necessary
Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department
Calculates accurate theoretical and weighted food costs
Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily
Kitchen health and safety
Follow all kitchen regulations as outlined and directed


Skills & Experience required by the Junior Sous Chef


Previous experience working within a Kitchen or similar environment preferred
Strong Communication skills (verbal, listening, writing)
Innovative
Pro-active and reliable
Able to work alone and within a team
IT skills
Good level of English essential
