PART- TIME CHEF/COOK

with a focus on vegetarian cooking

Trigonos is a multi-purpose residential centre based in the Snowdonia National Park and hosting a wide range of groups.  We specialise in vegetarian cuisine and the excellent quality and freshness of our food is a key element in developing and maintaining our reputation. We are currently looking for a part-time chef/cook to join our small and enthusiastic kitchen team.

Our focus is on providing fresh, seasonal and tasty food from scratch, using as much of the produce from our own land as possible. In addition to our home-grown food, we use local, in season, fairtrade and organic produce wherever feasible.

Food

Our meals are vegetarian but occasionally we have a few guests requiring simple meat or fish dishes. All chefs must therefore be able to satisfy this requirement when necessary. We also aim to meet most special dietary needs, such as vegan, gluten-free and dairy-free, to ensure that all of our guests are equally catered for.

Meals are prepared for up to 30 guests per day. All chefs plan their own menus so that guests enjoy a variety of dishes and cooking styles. You will be expected to plan your own menus after initial induction and training. We encourage creativity and imagination within budgetary constraints

During quieter times or when there is a glut of produce from the land, the kitchen works together to produce preserves or to freeze food down for use during the coming year.

Responsibilities

You will be responsible for:

  • Devising, planning and implementing your own menus. We encourage the use of creativity and imagination within budgetary constraints.
  • Preparing lunches, afternoon teas and dinners (but not breakfasts).
  • Supervising other team members within the kitchen.
  • Liaising with other team members, as necessary, to ensure the requirements of guests are met.
  • Helping to ensure that hygiene standards are met and maintained in the kitchen and that legal requirements are adhered to.

Accountability & Training

You will be accountable to the Lead Chef, but will not be working under their direct supervision. Full induction training and support will be provided to enable you to settle into the role before you ‘go it alone’. The chefs work as part of a team and are always happy to share ideas and offer encouragement.

We require all team members to hold a valid Level 2 Food Hygiene Certificate. If we employ someone who does not have a certificate we will arrange appropriate training.

Hours & Pay

All chefs work to a rota system, with hours being divided fairly throughout a full week. You will therefore be expected to cover some weekends on this basis. Chefs currently work a ten hour, straight shift day and do not operate a split shift system. However we can explore this should the need arise.

Hours will vary throughout the year according to the level of business as well as holiday and sickness cover. We run an annualised hours pay scheme.

Salary for this post is £8684 for a 20 hour week and is subject to annual review.

We will also consider candidates looking to work for us on a self-employed basis.
