We are seeking a fantastic Restaurant Manager / Bar Manager join an incredibly successful Bar and restaurant in Colchester. Salary 25 - 30k p.a.
Restaurant Manager / Bar Manager
The main duties of the role include but are not limited to:
- Maintain a clean and safe working environment for all staff to operate in
- Adhere to all health and safety regulations
- Maintain a daily record of all HACCAP regulations
- Maintain a daily/weekly cleaning schedule for all front and back of house areas
- Ensure a strict and uncompromising level of wet and dry hygiene products
- Monitor a strict stock rotation of all stock items and oversee stock takes
- Maintain a level of stock holding relevant to current business needs
- Ensure that all deliveries are received and accurate to the placed orders
- Implement new and exciting bar and cocktail menu’s to current trends
- Continue to develop new and exciting bar drinks to help deliver additional sales targets for all Bar areas within the estate
- Ensure accurate portion control on all drinks
- Maintain a consistent Wet gross profit
- Maintain a consistent labour yield not exceeding a present percentage of total net sales
- Maintain strict control on cash handling, cashing up and banking procedures in line with all company policies
- Ensure an adequate level of security staff is employed at all times and maintain a strict door entrance policy during busy times
- Keep all staffing levels in line with current business needs
- Maintain a constant level of on the job training with all existing and new employees
- Complete staffing rotas in advance based on availability and business needs, sending to Head Office for approval
- Maintain an open dialogue & working relationship with all current suppliers
- Keep a written record of all items returned, until credit notes or replacements items are delivered and to inform Head office
- Build a close working relationship with the venue managers, supervisors, all floor and bar staff along with all BOH staff
- Adhere to current government guidelines should the need arise to discipline any staff members under your direct supervision and to undertake necessary follow up actions
